Mexican Street Corn Casserole

Ingredients

  • 32 oz frozen whole-kernel corn
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup shredded cheese (Cotija is best)
  • 1 tsp chili powder
  • ½ tsp smoked paprika (optional but 🔥)
  • ½ tsp garlic powder
  • Juice of 1 lime
  • Salt & pepper, to taste
  • ½ cup crumbled Cotija (for topping)

Optional Toppings

  • Chopped cilantro
  • Sliced green onions
  • Extra lime wedges

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, whisk together mayonnaise, sour cream, chili powder, smoked paprika, garlic powder, lime juice, salt, and pepper.
  3. Stir in frozen corn and shredded cheese until evenly coated.
  4. Spread mixture into a greased casserole dish.
  5. Sprinkle crumbled Cotija evenly over the top.
  6. Bake uncovered for 25–30 minutes, until hot, bubbly, and lightly golden.
  7. Garnish with cilantro or green onions before serving. Add extra lime juice if desired.
