1 lb chicken
12 Corn tortillas
1.5 cups Mexican blend cheese
1/4 cup cream cheese
1 can Mexican rice
1/2 cup salsa
1/4 cup black beans
1/4 cup enchilada sauce
- Preheat your oven to 350 degrees F (175 degrees C) and grease a 9×13 inch baking dish.
- Cook and shred 1 lb of chicken. You can use cooked chicken breasts or thighs, or you can cook the chicken specifically for this recipe.
- In a large mixing bowl, combine the shredded chicken, 1/4 cup of cream cheese, 1/2 cup of salsa, 1/4 cup of black beans, and 1/4 cup of enchilada sauce. Mix everything together until well combined.
- Layer half of the corn tortillas on the bottom of the prepared baking dish. Spread half of the chicken mixture over the tortillas. Add half of the Mexican rice and sprinkle with 1/2 cup of Mexican blend cheese.
- Repeat the layering process with the remaining ingredients: corn tortillas, chicken mixture, Mexican rice, and cheese.
- Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy your delicious taco chicken bake! You can garnish with chopped cilantro, avocado slices, sour cream, or any other toppings you like.
