Chicken Rice Casserole

Ingredients

  • 1 lb chicken, chopped and cooked
  • 1 can cream of chicken soup with herbs
  • 1 ½ cans milk
  • ½ cup mayonnaise
  • 1 tbsp lemon juice
  • Salt & pepper, to taste
  • 2–3 cans worth of cooked rice (or about 3–4 cups cooked rice)
  • Corn flakes (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine:
    • cooked chicken
    • cream of chicken soup
    • milk
    • mayonnaise
    • lemon juice
    • salt & pepper
    • rice
      Mix until well combined.
  3. Pour mixture into a greased baking dish.
  4. If using corn flakes:
    • Either sprinkle them on top now, or
    • Bake the casserole for 35 minutes, then add the corn flakes and bake another 10 minutes.
  5. Bake for 45 minutes total, or until hot and bubbly.
