Ingredients
- 1 lb ground chicken
- 1 tbsp ranch seasoning
- ½ cup buffalo sauce (omit for non-spicy version)
- ¼ cup shredded cheddar cheese
- ½ cup almond flour or rice flour
- 1 egg
Instructions
- Preheat oven to 500°F.
- Line a baking sheet with parchment paper and lightly spray it with cooking spray.
- In a large bowl, combine:
- ground chicken
- ranch seasoning
- buffalo sauce (if using)
- cheddar cheese
- almond or rice flour
- egg
Mix until fully combined.
- Form mixture into meatballs and place them on the prepared baking sheet.
- Bake for 9–12 minutes, or until cooked through.
- After baking, either toss the meatballs in extra buffalo sauce or drizzle sauce on top before serving.
