Chicken Noodle Soup

Chicken Noodle is a downhome classic comfort dish, there are numerous ways to make it your own. I keep ours pretty simple but delicious.

Ingredients:

  • 8 cups water
  • 5 chicken bouillon cubes
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 1/2 lbs cooked chicken (roasted chicken works well for convenience)
  • 8 oz old-school frozen egg noodles or classic wide egg noodles (your choice)

Instructions:

  1. Boil the Base:
    • In a large pot, add 8 cups of water and the 5 chicken bouillon cubes.
    • Bring the mixture to a boil.
  2. Add Vegetables:
    • Add the chopped carrots and celery to the boiling water.
    • Reduce the heat to a light boil and let the vegetables cook until tender (about 10-15 minutes).
  3. Add Chicken:
    • Shred or chop the cooked chicken and add it to the pot.
    • Stir well to combine.
  4. Cook Noodles:
    • Add your preferred noodles (frozen egg noodles or classic wide egg noodles).
    • Continue to cook until the noodles are tender, following the package instructions (usually about 10-12 minutes for egg noodles).
  5. Serve:
    • Ladle the soup into bowls and serve hot.
    • Pair with your favorite toasted sandwich for a complete meal.
