Chicken Noodle is a downhome classic comfort dish, there are numerous ways to make it your own. I keep ours pretty simple but delicious.
Ingredients:
- 8 cups water
- 5 chicken bouillon cubes
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 1/2 lbs cooked chicken (roasted chicken works well for convenience)
- 8 oz old-school frozen egg noodles or classic wide egg noodles (your choice)
Instructions:
- Boil the Base:
- In a large pot, add 8 cups of water and the 5 chicken bouillon cubes.
- Bring the mixture to a boil.
- Add Vegetables:
- Add the chopped carrots and celery to the boiling water.
- Reduce the heat to a light boil and let the vegetables cook until tender (about 10-15 minutes).
- Add Chicken:
- Shred or chop the cooked chicken and add it to the pot.
- Stir well to combine.
- Cook Noodles:
- Add your preferred noodles (frozen egg noodles or classic wide egg noodles).
- Continue to cook until the noodles are tender, following the package instructions (usually about 10-12 minutes for egg noodles).
- Serve:
- Ladle the soup into bowls and serve hot.
- Pair with your favorite toasted sandwich for a complete meal.
