Ingredients
- 1 lb chicken, chopped and cooked
- 1 can cream of chicken soup with herbs
- 1 ½ cans milk
- ½ cup mayonnaise
- 1 tbsp lemon juice
- Salt & pepper, to taste
- 2–3 cans worth of cooked rice (or about 3–4 cups cooked rice)
- Corn flakes (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine:
- cooked chicken
- cream of chicken soup
- milk
- mayonnaise
- lemon juice
- salt & pepper
- rice
Mix until well combined.
- Pour mixture into a greased baking dish.
- If using corn flakes:
- Either sprinkle them on top now, or
- Bake the casserole for 35 minutes, then add the corn flakes and bake another 10 minutes.
- Bake for 45 minutes total, or until hot and bubbly.
