Ingredients
- 32 oz frozen whole-kernel corn
- ½ cup mayonnaise
- ½ cup sour cream
- 1 cup shredded cheese (Cotija is best)
- 1 tsp chili powder
- ½ tsp smoked paprika (optional but 🔥)
- ½ tsp garlic powder
- Juice of 1 lime
- Salt & pepper, to taste
- ½ cup crumbled Cotija (for topping)
Optional Toppings
- Chopped cilantro
- Sliced green onions
- Extra lime wedges
Instructions
- Preheat oven to 375°F.
- In a large bowl, whisk together mayonnaise, sour cream, chili powder, smoked paprika, garlic powder, lime juice, salt, and pepper.
- Stir in frozen corn and shredded cheese until evenly coated.
- Spread mixture into a greased casserole dish.
- Sprinkle crumbled Cotija evenly over the top.
- Bake uncovered for 25–30 minutes, until hot, bubbly, and lightly golden.
- Garnish with cilantro or green onions before serving. Add extra lime juice if desired.
